Fortified wines are produced in the same way as other wines; however Fortified wines are "fortified" or strengthened by the addition of brandy or a neutral grape spirit. Fortified wines are either dry or sweet wines. The stage at which the brandy or grape spirit is added to the wine determines the style of the Fortified wine. Fortified wines that have the brandy or grape spirit added before or during the fermentation process are sweeter than Fortified wines that have the brandy or the grape spirit added at the end of the fermentation process. The main difference between Fortified wine and all other wine is the alcohol content. Fortified wines have an alcohol content between 16 ? 24 percent by volume, while table wines typically have an alcohol content between 8 ? 14 percent by volume. There are many different styles of Fortified wines including Sherry, Port, Madeira, Marsala, Commandaria, and Vermouth. Fortified wines are normally made with blends of various grapes and various vintages.
Fortified wines are usually aged in wood casks. The amount of time that a Fortified wine spends aging in a wood cask depends on the wine itself. Because of the deep wood aging Fortified wines will benefit from decanting and aeration before serving. Fortified wines should be chilled between 55 ? 68 degrees Fahrenheit before serving. Fortified wines that are served too warm tend to taste unbalanced with a heavy alcohol edge. Fortified wines that are served too cold lose their innate flavors and bouquets. Fortified wines come in a wide range of colors from golden-yellow, amber, garnet, and even violet shades. White Fortified wines exhibit bouquets / flavors of candied fruit, honey, apricot, peach, flowers, and spice. Red Fortified wines have bouquets / flavors of cookie fruit, black fruit jam, chocolate, and spice. Food pairings that work best with white Fortified wines are candied fruit or tropical fruit desserts. Red Fortified wines pair best with black fruit desserts, certain chocolate desserts, and blue-veined cheeses.
