Port wine is a Portuguese wine that is produced in the Douro Valley in Portugal. The Port wine producing Douro region was established in 1756, making it the third oldest protected wine region in the world. There are approximately one hundred varieties of grapes that are sanctioned for port production, but there are only five grape varieties that are widely cultivated. The grapes used to produce Port wines in Portugal are strictly regulated while wines made outside of the Douro region in Portugal that describe themselves as Port wines may be made from other grape varieties. Port-styled wines are produced all over the world in areas like, Australia, South Africa, Canada, India, Argentina, and the United States. Port-styled wines that are produced outside of the Douro region in Portugal are not considered a true "Port" and the winemakers are required to include the area of production alongside the Port name on the wine label. Port grapes are small and produce concentrated and long-lasting flavors, suitable for long aging.
Port wine is usually a sweet, red wine that is often served with dessert but it also comes in dry, semi-dry, and white varieties. Port wines have a reputation for being noticeably sweeter, and richer, with more body and palate density than other still wines. Port wines are produced in many different styles including Vintage Port, Tawny Port, Ruby Port, Rose Port, and White Port. These different styles can be split into two distinct categories, wood aged or bottle aged. Port wines that have matured in a sealed glass bottle do not have any exposure to oxygen and experience "reductive" aging. Bottle aged Ports lead to the wine losing its color very slowly and produces a wine which is smoother on the palate and less tannic. The majority of Port wines are wood aged to some extent. Port wines that have matured in wooden barrels are exposed to a small amount of oxygen and experiences what is known as "oxidative" aging. Wood aged Ports lose their color at a faster pace and lose volume due to evaporation, leaving behind a wine that is slightly more vicious.
