Sparkling wine is produced worldwide in countries like Italy, Spain, Australia, New Zealand, and the United States. Sparkling wine is most commonly white or rose but there are many examples of red sparkling wines. Sparkling wines are made up of a blend of at least three different grape varieties. Sparkling wine is labeled as either "vintage" or "non-vintage" (NV on the label). Today, Sparkling wine is mainly produced as "non-vintage", meaning it is produced with a blend of grapes from different vintages. Sparkling wines labeled as "vintage" are produced with at least 85% of grapes that are from the same vintage. "Non-vintage" Sparkling wine is ready to drink immediately and should be consumed within 1-2 years. "Vintage" Sparkling wine can typically benefit from some bottle-aging however there is usually no improvement 10 years past the vintage date. Sparkling wine will lose its flavor and effervesce after a few years in the bottle, particularly if it is not stored in optimum conditions.
Sugar and yeast are added to the wine during the second fermentation process which gives Sparkling wine its bubbles. The second fermentation process usually occurs in the actual wine bottle but may also take place in a fermentation tank. Sparkling wine is categorized as Extra Brut, Brut, Extra Dry, and Demi-Sec. Sparkling wines that are classified as Extra Brut are extra dry and have 0.5-1.5% of residual sugar per liter. Sparkling wine that is labeled as Brut is dry and has 0.5-1.5% of residual sugar per liter. Sparkling wine that is labeled as Extra Dry is medium dry and has 1.2-2.0% of residual sugar per liter. Sparkling wine that is labeled as Demi-sec is sweet and has 3.3-5.0% of residual sugar per liter. Sparkling wine tends to exhibit bouquets / flavors of citrus, apple, pear, strawberry, vanilla, toast, and butter. Sparkling wine pairs well with a variety of food including caviar, mild to strong cheese, chips, popcorn, a variety of appetizers, nuts, spicy Asian cuisine, Mexican food, and pizza that is light on sauce.
