3 C. Rolled Oats
2 Bananas, soft and mashed
1 C. Brown Sugar
¼ C. Coconut Oil
1 1/4 C. Milk
1 tsp. Baking Powder
1 tsp. Vanilla Extract
Optional: Blueberries, Banana Slices, Strawberries, Apples & Cinnamon, Dried Cranberries, Nuts
In a large bowl, whisk eggs, then add in remaining ingredients. Last, add whatever optional toppings you'd like to flavor your oatmeal with. Save a bit for the end.
Divide the mixture evenly into a greased or lined muffin tin. Once poured, top each cup with a little more of your additional ingredient(s) of choice.
Bake for 20-25 minutes at 375 F.
