Cauliflower Mashed Potatoes
Healthy, easy, delicious, and just in time for the holidays. Need we say more?
Ingredients:
1 Head of Cauliflower, chopped into small florets
2 Cloves Garlic, minced
2 Tbsp. Heavy Cream
1 Tbsp. Butter
¼ C. Parmesan Cheese, shredded
6 oz. Cream Cheese
Salt & Pepper to taste
Optional: Green onions, chopped
Directions:

Preheat oven to 400 degrees F.

Put all ingredients except the Parmesan cheese in a food processor and mix until smooth – as smooth as mashed potatoes! – then spoon into a baking dish. Top with cheese.

Bake for 30-35 minutes. Serve warm, fresh from the oven.

Garnish with chopped green onions for an additional bit of flavor.
