Ingredients
2 Tbsps. olive oil
1-8 oz. package sliced mushrooms
1/2 c. water
1-8 oz. package fresh spinach
1-12 oz. package bowtie pasta
1 large yellow onion, diced
¾ - 1 c. sundried tomatoes, diced
3 c. (additional) water
2 tbsps. Italian Seasoning
¼ c. fresh rosemary, chopped, some whole for garnish
Salt and pepper, to taste
Parmesan (optional)

Directions
1) In a large pot, heat olive oil over medium heat. Add sliced mushrooms and onions, and stir constantly for 2-3 minutes or until soft.
2) Add 1/2 cup of water and half the spinach, and stir until cooked down, approximately 4 minutes.
3) Turn heat up to high and add the pasta, half the chopped rosemary, and 1 cup of water. Let boil until pasta is cooked, about 10 minutes, stirring frequently. Add water as needed until bowtie pasta is cooked through.
4) Remove from heat and add sundried tomatoes, remaining rosemary, seasoning, salt, and pepper to taste. Garnish with whole sprigs of rosemary and optional parmesan, and serve.
