A pasta salad is a simple way to provide delicious food for potlucks, BBQ’s, and other get-togethers. They can get redundant though; it seems like many of the recipes out there are all the same. Well, leave it Larry, our favorite at-home chef, to mix things up and give us a new twist on a traditional classic!

Ingredients:
1 box of Orzo Pasta, cooked in chicken broth (1 C. pasta water reserved)
3 Tbsp. Olive Oil
1 Yellow Squash, chopped into 1" pieces
3 C. Brussel Sprouts, shaved
3 Garlic Cloves, chopped
Cherry Tomatoes, halved
1/3 C. Green Onion
Fresh Lemon Juice from 2-3 lemons
Feta Cheese Salt


Directions:

1. Sauté the squash over medium heat in the olive oil for 3-4 minutes. Then, add the brussels sprouts, garlic, and salt.

2. Add the tomatoes and reserved pasta broth water, then the green onion. Squeeze the juice of 1 lemon into the skillet and sauté for another minute.

3. Add your cooked orzo pasta to the skillet (or bowl) and stir together. Pour into a large bowl and top with additional lemon juice, prosciutto or sausage if you like, goat cheese, herbs, or a cashew cheese as a vegan option. This dish can be customized for anyone – meat-eaters to vegans alike!
