Strawberry Lemonade Cake
Your Favorite Vanilla Cake, Baked and Cooled
2 Tbsp. Butter, soft but not melted
1 C. Powdered Sugar
3 Tbsp. Lemon Juice
1/2 tsp. Lemon Extract or 1 drop Lemon Essential Oil
1/2 lb. Fresh Strawberries, sliced
One Handful of Blueberries, washed and dried
One Handful of Raspberries, washed and dried
1. In a small bowl, whisk together the butter, lemon juice, and lemon extract, then slowly whisk in the powdered sugar a little at a time until smooth and creamy.
2. Top the cake with the icing and place in the refrigerator for 1 hour to allow it to set.
3. Just before serving, add your fresh berries to the top of the cake. Slice and enjoy!
