Cajun Shrimp with Chipotle Mayo
Ingredients for Shrimp:
1 lb. Raw Shrimp, peeled and deveined
1 Tbsp. Butter, melted
1 1⁄2 Tbsp Honey
Juice of 2 Limes
1 tsp. Cajun Seasoning
1 Tbsp. Chili Powder
1 tsp. Onion Powder
1 Tbsp. Cilantro, finely chopped
Salt & Pepper to taste
Ingredients for Dip:
1 C. Mayonnaise
1/2 Tbsp. Lime Juice
1⁄2 tsp. Garlic Powder
2 Chipotle Chiles in Adobo Sauce
Salt & Pepper to taste
Directions:
- Preheat oven to 450 ° F.
- Rinse shrimp and pat dry. We pulled the tails off of our shrimp so that people don't have to hold on to them at the BBQ when they're done snacking!
- Combine butter, honey, and lime juice in a small bowl. Once mixed, add Cajun Seasoning, Chili Powder, Onion Powder, cilantro, salt, and pepper.
- Toss each shrimp in the mixture to coat, then lay all shrimp flat on a lined baking sheet.
- Bake for 6 minutes.
- Meanwhile, make the chipotle mayo dip by simply combining all dip ingredients in a food processor and blending until smooth.
