Ingredients:
1 lb. Shrimp, cooked and peeled
2 Cucumbers, diced
2 Tomatoes, diced
1/2 Red onion, chopped
1-2 Avocados, diced
1 Jalapeño, diced
3 Tbsp. Cilantro, chopped
1/4 C. Lime Juice
Salt & Pepper, to taste

Directions:
1. Wash and prep all produce according to the ingredients list. Additionally, wash and pat dry your shrimp.

2. Cut shrimp into bite-sized chunks, either in halves or quarters according to your preferences.

3. In a large mixing bowl, combine all ingredients except lime juice, salt, and pepper and toss until evenly mixed.

4. Add lime juice and sprinkle with salt and pepper to taste. Toss until lime juice is distributed throughout.

5. Serve chilled, either as a salad or with chips!
