From Larry’s Kitchen: Peach Blueberry Cobbler
Larry has been making this cobbler recipe for his friends and family for years and years, and has thoroughly apologized to each of them. Not because the recipe is awful; quite the opposite, actually. This cobbler recipe is mind-blowingly delicious. No, Larry has had to apologize to his friends and family because they have thought, for all these years, that he slaved over the stove all day to prepare his infamous cobbler recipe… when in truth, it’s as simple as 7 ingredients. We’re sure they’ve forgiven you, Larry. We’re pretty confident they’ve been begging you for this recipe for years anyway, and now, they have it. Enjoy!
Ingredients:
For the crust:
1 ¾ C. Flour
1 ¾ C. Baker’s Sugar
1 ¾ Sticks of Butter, melted
For the filling:
Fruit filling of your choice. Larry used:
4 Peaches, still hard, sliced unevenly
2-3 handfuls of blueberries
1 ½ Tbsp. Brown Sugar
1 ½ Tbsp. Agave Nectar
Directions:
1. Preheat your oven to 350°. In a large mixing bowl, combine the flour, sugar, and butter until mixed. Use a fork or your hands, depending on preference. Compress into a ball, wrap in plastic food wrap, and allow to set on the counter for 30-45 minutes.
2. While dough is resting, slice your peaches into uneven wedges. If you’re using different fruit, prepare that as needed. Fill your greased cast iron pan or ceramic pie tin with the fresh fruit and top with the agave and brown sugar.
3. Break your dough ball into 3-4 even pieces and, using your hands, flatten the pieces until they’re about ½" thick. Variance is okay, no need to be exact. Use a knife or dough scraper to pick up big chunks of the dough and lay them on top of the cobbler. After the fruit is mostly covered, press the top lightly and bake for 45-50 minutes, or until the crust is golden brown. Serve with vanilla ice cream, and enjoy!
