These tea cakes are a classic, Southern tradition served throughout the year, but they shine on Easter morning! The texture is much like what you'd imagine you'd get if you mixed a biscuit, a cake, and a cookie together, and they have a very light, sweet, buttery flavor that is perfect for pairing with coffee and tea. They're sweet little things and are sure to be a hit at your Easter gathering.

Ingredients:
1 C. Butter
2 C. Sugar
4 Eggs, beaten
2 tsp. Vanilla Extract
1/3 C. Buttermilk
1/2 tsp. Baking Soda
1/2 tsp. Baking Powder Pinch of Salt
4 1/2 C. Flour

Directions:
1. Preheat your oven to 425°F and line a cookie sheet with parchment paper or a silicone liner.
2. In a large bowl, mix all of the ingredients together until well combined. Texture will be thick and slightly sticky.
3. Use a large cookie scoop to spoon the mixture onto the cookie sheet, then sprinkle with a generous amount of granulated sugar. Bake in the oven for 10 minutes, or until the bottoms are very slightly browned - do not overcook. Substitute colored sugar for the sprinkling, or part colored and part regular sugar in the batter, for fun-colored cookies!
